Ingredients

Scale
  • 1 large head of cauliflower (about 2 pounds), cut into bite-sized florets
  • 1 cup all-purpose flour (or gluten-free blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsweetened plant-based milk (or regular milk)
  • 1 cup panko breadcrumbs (regular or gluten-free)
  • 1/3 cup hot sauce (Frank’s RedHot or Nashville-style)
  • 3 tablespoons vegetable oil (canola or avocado)
  • 1 tablespoon brown sugar
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Sliced pickles (optional, for serving)
  • Chopped fresh parsley or green onions (optional, for serving)
  • Ranch or vegan ranch for dipping (optional)

Instructions

  1. Cut cauliflower into small, bite-size florets. Rinse and thoroughly pat dry with paper towels.
  2. In a large bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Pour plant-based milk into a second bowl. Add panko breadcrumbs to a third bowl.
  4. Toss cauliflower florets in the flour mixture, dip each in the milk, then roll in panko until well coated. Press gently so the panko sticks. Set coated florets on a baking sheet.
  5. Preheat air fryer to 390°F (200°C) for 3 minutes.
  6. Arrange florets in a single layer in the air fryer basket (work in batches if needed). Spray lightly with oil. Air fry for 11-13 minutes, shaking halfway through, until golden brown and crispy.
  7. While cauliflower cooks, whisk together hot sauce, oil, brown sugar, cayenne, smoked paprika, garlic powder, and salt in a small bowl. Taste and adjust heat if needed.
  8. Transfer crispy cauliflower to a large bowl. Drizzle with Nashville hot sauce and gently toss to coat, or serve sauce on the side for dipping.
  9. Serve immediately, topped with sliced pickles and chopped parsley if desired. Enjoy with ranch or vegan ranch for dipping.

Notes

For gluten-free, use GF flour and panko. Adjust cayenne for desired heat. Don’t overcrowd the air fryer basket for best crispiness. Double-dip for extra thick breading. Keep cooked bites warm in a 200°F oven if making large batches. Breaded cauliflower can be refrigerated up to 2 hours before air frying.
