  • 1/2 cup (100 g) brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 egg

  • 1 3/4 cups (220 g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  1. Pour 1 cup (240 ml) of apple cider into a saucepan and simmer over medium heat until it reduces to about 1/4 cup (60 ml). Let it cool completely before using.
  2. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  3. In a large mixing bowl, beat 1/2 cup (115 g) of softened unsalted butter, 1/2 cup (100 g) of brown sugar, and 1/4 cup (50 g) of granulated sugar until light and fluffy.
  4. Mix in one egg, 1 tsp of vanilla extract, and the cooled reduced apple cider. Blend until smooth.
  5. In a separate bowl, whisk together 1 3/4 cups (220 g) of all-purpose flour, 1 tsp of baking powder, 1/4 tsp of baking soda, 1/2 tsp of salt, 1 tsp of cinnamon, and 1/4 tsp of nutmeg.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  7. Scoop the dough into tablespoon-sized balls and place them on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden.
  8. Transfer the cookies to a cooling rack and let them cool completely before serving.
