  • 1½ cups (190 g) all-purpose flour
  • ½ cup (100 g) brown sugar
  • ½ cup (100 g) granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt

  • ¼ tsp nutmeg
  • ¼ cup (60 g) melted unsalted butter
  • 1 egg
  • 1 tsp vanilla extract
  • ¼ cup (60 ml) milk
  • ½ cup (100 g) granulated sugar (for coating)
  • 1 tsp cinnamon (for coating)
  • Melted butter (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease your donut pan with non-stick spray or butter.
  2. Pour 1 cup (240 ml) of apple cider into a small saucepan, bring it to a boil, and then reduce the heat to simmer until it’s reduced to about ½ cup (120 ml). Let it cool.
  3. In a large mixing bowl, whisk together 1½ cups (190 g) all-purpose flour, ½ cup (100 g) brown sugar, 1 tsp baking powder, ½ tsp salt, 1 tsp cinnamon, and ¼ tsp nutmeg.
  4. In another bowl, whisk together the cooled apple cider reduction, ¼ cup (60 g) melted butter, 1 egg, 1 tsp vanilla extract, and ¼ cup (60 ml) milk.
  5. Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula until just combined. Avoid overmixing.
  6. Spoon the batter into the prepared pan, filling each cavity about ¾ full. Use the back of a spoon or a piping bag for cleaner results.
  7. Bake for 10-12 minutes or until the donuts spring back lightly when touched. Let them cool in the pan for 5 minutes before transferring to a cooling rack.
  8. In a shallow bowl, mix ½ cup (100 g) granulated sugar with 1 tsp cinnamon. Dip each donut into melted butter, then roll them in the cinnamon-sugar mixture until evenly coated.
