A quick and easy appetizer featuring sweet Medjool dates stuffed with creamy goat cheese and wrapped in crispy bacon, perfect for entertaining or a tasty snack.

  • 20 large Medjool dates, pitted
  • 4 ounces goat cheese, softened
  • 10 slices thin-cut bacon, cut in half
  • Optional: pinch of freshly ground black pepper
  • Optional: honey for drizzling
  • Optional: fresh herbs like thyme or rosemary for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make a lengthwise slit in each date and remove the pit if not already pitted, being careful not to cut all the way through.
  3. Soften the goat cheese by letting it sit at room temperature for 10 minutes. Optionally, mix in black pepper or finely chopped herbs.
  4. Fill each date generously with goat cheese using a small spoon or piping bag.
  5. Wrap each stuffed date with half a slice of bacon, tucking the end underneath and securing with a toothpick if needed.
  6. Place the wrapped dates seam side down on the prepared baking sheet with space between each.
  7. Bake for 20-25 minutes, turning once halfway through, until bacon is crisp and golden brown.
  8. Optionally drizzle with honey or sprinkle fresh herbs on top after baking.
  9. Serve warm, fresh from the oven.

Notes

Use thin-cut bacon for best crispiness. Turn dates halfway through baking for even cooking. For thick-cut bacon, reduce oven temperature to 375°F and bake longer. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven to maintain crispness. Avoid microwaving.
