  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 tablespoon lime juice, freshly squeezed
  • 2 tablespoons chopped cilantro (optional)

Instructions

  1. Slice the chicken into bite-sized pieces, and thinly slice the bell peppers and onion. Mince the garlic and set everything aside.
  2. In a small bowl, mix the smoked paprika, chili powder, cumin, salt, and pepper.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  4. Add the chicken pieces to the skillet and sprinkle half of the spice mixture over them. Cook for 4-5 minutes, flipping once, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, add another tablespoon of olive oil and toss in the bell peppers, onion, and garlic. Sprinkle the remaining spice mixture over the veggies. Cook for 6-8 minutes, stirring occasionally, until the vegetables are tender but still vibrant.
  6. Return the chicken to the skillet and stir everything together. Squeeze fresh lime juice over the dish and cook for another 1-2 minutes to let the flavors meld.
  7. Remove from heat and garnish with chopped cilantro, if desired. Serve hot, and enjoy!
