  • 8 medium flour tortillas

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add chopped onions and garlic, and sauté until softened, about 3 minutes.
  3. Add the ground beef, breaking it up into small pieces as it cooks. Stir in chili powder, cumin, salt, and pepper, and cook until the beef is browned and fully cooked, about 6-8 minutes.
  4. In a small saucepan, combine tomato sauce, chicken broth, and a pinch of chili powder. Heat over medium-low, stirring occasionally, until the sauce is warm and slightly thickened, about 5 minutes.
  5. Spread a small amount of the enchilada sauce in the bottom of your baking dish.
  6. Place a scoop of the beef mixture in the center of a tortilla, sprinkle with shredded cheese, and roll tightly. Lay the rolled tortillas seam-side down in the dish.
