  • 2 tablespoons honey (or maple syrup as an alternative)
  • 2 tablespoons almond butter (or peanut butter)
  • 1 teaspoon lemon zest
  • Pinch of salt

Instructions

  1. Wash the blueberries and zest the lemon. If using frozen blueberries, let them thaw slightly.
  2. Add the oats to a food processor and pulse until finely ground. Skip this step if using quick oats.
  3. In a medium bowl, combine the cream cheese, almond butter, honey, and lemon zest. Stir until smooth and creamy.
  4. Gradually mix in the protein powder, ground oats, and a pinch of salt. The mixture should be thick enough to roll into balls.
  5. Gently stir in the blueberries, being careful not to crush them too much.
  6. Use a cookie scoop or spoon to portion out the mixture. Roll each portion into a ball with your hands.
  7. Place the protein bites on a lined tray and refrigerate for at least 30 minutes to firm up.
