  • ½ cup (100g) granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2¾ cups (345g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract. Beat until fully combined.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, cornstarch, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  6. Using a cookie scoop or spoon, portion the dough into balls (about 1½ tablespoons each). Place them on the prepared baking sheets, leaving about 2 inches between each ball.
  7. Bake for 10-12 minutes, or until the edges are slightly golden. The centers will look soft but will firm up as the cookies cool.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
