Buffalo Chicken Crescent Roll-Ups are a quick, cheesy, and spicy party snack made with shredded chicken, buffalo sauce, and melty cheese wrapped in buttery crescent dough. Perfect for game days, gatherings, or a comforting treat, these roll-ups are crowd-pleasers that come together in under 30 minutes.

  • 2 cups cooked chicken breast, shredded (rotisserie chicken recommended)
  • 1/3 cup buffalo wing sauce
  • 2 tablespoons ranch or blue cheese dressing
  • 1 can (8 oz) crescent roll dough (8-count)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 green onions, thinly sliced (optional)
  • Salt and pepper, to taste
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly spray with nonstick cooking spray.
  2. In a medium bowl, mix shredded chicken with buffalo wing sauce and ranch or blue cheese dressing until evenly coated. Season with salt and pepper to taste.
  3. Open the can of crescent rolls and separate each triangle. Lay them flat on the prepared baking sheet.
  4. Spoon about 2 tablespoons of buffalo chicken mixture onto the wide end of each crescent triangle. Sprinkle with cheddar and mozzarella cheese.
  5. Starting at the wide end, gently roll each crescent triangle toward the point, tucking in filling and pinching sides closed if needed. Place seam-side down.
  6. Sprinkle each roll-up with sliced green onions if desired. Add a dash of buffalo sauce on top for extra heat, if preferred.
  7. Bake for 12–15 minutes, until golden brown and cheese is bubbling. Rotate the tray halfway through for even browning.
  8. Let cool for 2–3 minutes before serving. Serve warm with extra buffalo sauce or ranch for dipping.

Notes

For best results, use freshly shredded cheese for smoother melting. Don’t overfill the crescents to prevent bursting. Crescent dough is easier to handle when cold. These roll-ups can be assembled ahead and baked just before serving. For a lighter version, use Greek yogurt instead of ranch. Substitute gluten-free crescent dough for a gluten-free option.
