  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat your oven to 250°F (120°C). Line a rimmed baking sheet with parchment paper.
  2. Add pretzels to a large mixing bowl and set aside.
  3. In a heavy-bottomed saucepan, melt the butter over medium heat. Stir in the brown sugar and corn syrup until smooth. Bring the mixture to a boil and cook for 3-4 minutes without stirring.
  4. Remove from heat and quickly stir in the vanilla extract and baking soda. The mixture will bubble up—this is normal.
  5. Pour the hot toffee over the pretzels. Use a rubber spatula to gently toss everything until the pretzels are evenly coated.
  6. Spread the coated pretzels onto the prepared baking sheet in an even layer. Bake for 45 minutes, stirring every 15 minutes to ensure even caramelization.
  7. Remove the baking sheet from the oven and let the mix cool completely. Once hardened, break apart any large clusters.
