  • 1 English cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (or cubed mozzarella)
  • 1/4 cup fresh basil leaves, torn or julienned
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze (or more to taste)
  • Salt and freshly cracked pepper to taste
  • Optional: Red pepper flakes or toasted pine nuts

Instructions

  1. Slice the English cucumber into thin rounds or halve the rounds for smaller pieces.
  2. Halve the cherry tomatoes and set aside.
  3. Drain and pat dry the mozzarella balls. If using cubed mozzarella, ensure the pieces are bite-sized.
  4. In a large mixing bowl, gently toss the cucumber slices, cherry tomato halves, mozzarella balls, and torn basil leaves.
  5. Drizzle with extra virgin olive oil, then season with salt and freshly cracked pepper to taste.
  6. Drizzle the balsamic glaze over the salad, starting with about 2 tablespoons and adding more if desired.
  7. Lightly toss the salad to ensure every bite is balanced. Serve immediately for the freshest flavor.

For the freshest flavor, add the balsamic glaze just before serving. Refrigerate the salad for 15 minutes before serving for extra refreshment. Customize with red pepper flakes, toasted pine nuts, or seasonal ingredients like peaches or sun-dried tomatoes.
