Caramel Apple Scones Recipe with Perfect Maple Glaze

Tender, buttery scones with caramelized apples and a decadent maple glaze, perfect for breakfast or a cozy afternoon treat.

  • 2 cups (250g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (15g) baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1/2 cup (120ml) heavy cream, plus extra for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 large apple, peeled and diced (Honeycrisp or Granny Smith recommended)
  • 2 tablespoons (30g) unsalted butter
  • 2 tablespoons (30g) brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1 cup (120g) powdered sugar
  • 2 tablespoons (30ml) pure maple syrup
  • 23 tablespoons (30–45ml) milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Melt butter in a non-stick skillet over medium heat. Add diced apples, brown sugar, and cinnamon. Cook for 5–7 minutes until apples are tender and caramelized. Set aside to cool.
  3. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  4. Add cold, cubed butter to the dry mixture. Use a pastry cutter or fork to cut the butter into pea-sized pieces. The mixture should look crumbly.
  5. In a medium bowl, whisk together heavy cream, egg, and vanilla extract.
  6. Gradually add the wet ingredients to the dry mixture, stirring gently. Fold in the caramelized apples, being careful not to overmix.
  7. Turn the dough onto a floured surface. Pat it into a circle about 1 inch (2.5 cm) thick. Cut into 8 wedges and place them on the prepared baking sheet.
  8. Brush the tops of the scones with heavy cream. Bake for 18–22 minutes or until golden brown. Cool on a rack.
  9. In a bowl, whisk together powdered sugar, maple syrup, milk, and vanilla. Drizzle over the cooled scones.

Notes

Keep the butter cold for flaky layers. Don’t overmix the dough to avoid tough scones. Adjust the glaze consistency by adding milk or powdered sugar as needed.
