  • 1 packet ranch seasoning mix (about 1 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions, thinly sliced (optional)
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1012 bacon strips (thick-cut preferred)
  • Fresh parsley, chopped (optional, for garnish)
  • Extra shredded cheese (optional, for garnish)
  • Ranch dressing (optional, for dipping)

Instructions

  1. Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper or foil.
  2. In a large mixing bowl, combine ground beef, ranch seasoning, cheddar cheese, mozzarella cheese, green onions, black pepper, and garlic powder. Mix gently until just combined.
  3. Take about 2 tablespoons of the beef mixture and roll it into a small log, about 2 inches long. Repeat until all the mixture is used (should yield 10-12 logs).
  4. Lay out a strip of bacon and place a beef log at one end. Roll up tightly, wrapping the bacon around the beef. Place seam-side down on the prepared baking sheet. Repeat for all rollups.
  5. Bake on the middle rack for 20 minutes. Use tongs to flip each rollup, then bake another 10-15 minutes, until the bacon is crispy and cheese is bubbling (total 30-35 minutes). For thick bacon, add 5 extra minutes.
  6. Check doneness: beef should be cooked through (internal temp 160°F), bacon golden brown. Some cheese may leak out—this is normal.
  7. Remove from oven and let rollups rest for 5 minutes. Garnish with fresh parsley and extra cheese if desired.
  8. Serve hot with ranch dressing for dipping.

Notes

For extra crispy bacon, bake rollups on a wire rack set over the baking sheet. If bacon unravels, secure with toothpicks (remove before serving). Use freshly grated cheese for best melt. Filling can be made ahead and refrigerated up to 24 hours. For a spicy kick, add diced jalapeños or use pepper jack cheese. Check ranch seasoning and bacon for gluten if needed.
