  • 4 small round bread loaves (about 56 inches each; sourdough or Italian)
  • 1/2 cup unsalted butter, softened
  • 45 cloves garlic, minced or pressed
  • 2 tablespoons fresh parsley, finely chopped (or 2 teaspoons dried parsley)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 pound ground beef or Italian sausage (or plant-based ground for vegetarian)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg (optional)
  • Extra parsley or basil, chopped (optional topping)
  • Red pepper flakes (optional topping)
  • More grated Parmesan (optional topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice tops off bread loaves (about 1 inch from the top) and hollow out insides, leaving a 1/2-inch shell.
  3. In a mixing bowl, combine softened butter, minced garlic, parsley, salt, pepper, and Parmesan. Mix until smooth.
  4. Spread garlic butter inside each bread bowl and over the cut tops. Place bowls and tops on a baking sheet, cut side up.
  5. Bake for 8 minutes until edges are lightly golden and insides are crisp. Let cool slightly.
  6. Heat a skillet over medium heat. Add ground beef or sausage and cook until browned (5-6 minutes).
  7. Add diced onion and cook 2-3 minutes until translucent.
  8. Stir in minced garlic, marinara sauce, Italian seasoning, dried basil, salt, and pepper. Simmer 3-4 minutes until thickened.
  9. In a bowl, combine ricotta, grated Parmesan, and egg (if using). Mix until creamy. Season with salt and pepper.
  10. Spoon a layer of meat sauce into each bread bowl (about 2 tablespoons).
  11. Add a layer of ricotta mixture (about 2 tablespoons), then sprinkle mozzarella (about 2 tablespoons).
  12. Repeat layers once more, finishing with extra mozzarella on top.
  13. Place bread bowl lids on the side of the baking sheet for toasting.
  14. Bake at 375°F (190°C) for 18-20 minutes, or until cheese is bubbling and golden brown. Tent with foil if tops brown too quickly.
  15. Let bowls cool for 5 minutes before serving.
  16. Sprinkle with fresh herbs, red pepper flakes, or extra Parmesan. Serve with toasted bread lids for scooping.

Notes

Use day-old bread for sturdier bowls. Prep meat sauce and cheese mixture ahead for easy assembly. For extra crispy bowls, bake directly on the oven rack for the last 3 minutes. Vegetarian and gluten-free adaptations are easy with plant-based ground and GF bread. Don’t overfill bowls to avoid bubbling over.
