  • 2 large eggs
  • 1/3 cup whole milk (or half-and-half for extra richness)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1 tablespoon unsalted butter (for frying or greasing baking dish)
  • Reserved icing from cinnamon roll can (for drizzling)
  • Optional: extra powdered sugar, chopped nuts, or fresh berries for serving

Instructions

  1. Pop open the can of cinnamon rolls and set the icing aside. Place the rolls on a cutting board and cut each one into 4-6 bite-sized pieces.
  2. In a medium mixing bowl, whisk together eggs, milk, vanilla extract, cinnamon, and a pinch of salt until smooth and frothy.
  3. Toss the cut cinnamon roll pieces into the custard and gently stir to coat. Let sit for about 1 minute, but do not over-soak.
  4. Heat a large nonstick skillet or griddle over medium heat. Add butter and swirl to coat the pan. (If baking, grease a 9×13 inch baking dish and preheat oven to 350°F.)
  5. Lay the custard-soaked pieces in a single layer in the hot skillet. Cook for 2-3 minutes per side until golden brown and slightly crisp, flipping with a spatula or tongs. Work in batches if needed.
  6. Alternatively, for baking: arrange soaked pieces in the buttered baking dish and bake at 350°F for 20-22 minutes, flipping halfway through.
  7. Warm the reserved icing in the microwave for 10-15 seconds until pourable. Drizzle over the hot French toast bites. Add powdered sugar, nuts, or berries if desired.
  8. Serve immediately while warm.

Notes

Don’t overcrowd the pan for best crispiness. For gluten-free or dairy-free, use appropriate cinnamon roll dough and milk/butter substitutes. Keep finished bites warm in a 200°F oven if making in batches. Add-ins like chocolate chips, diced apples, or nuts are delicious. Leftovers can be refrigerated for up to 3 days or frozen for up to a month.
