  • 4 bone-in pork chops (about 1-inch thick)
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk (or buttermilk for extra richness)
  • Vegetable oil for frying
  • 4 slices of bacon (diced)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk (whole milk or cream for a richer sauce)
  • Salt and pepper to taste

Instructions

  1. Pat the pork chops dry with paper towels to ensure the coating sticks well.
  2. Set up your dredging station: In one bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, and pepper. In another bowl, whisk the eggs and milk until smooth.
  3. Coat each pork chop in the flour mixture, then dip into the egg mixture, and finally coat again in the flour mixture. Press the flour onto the chops to create a solid crust.
  4. In a cast-iron skillet, heat about 1/4 inch of vegetable oil over medium heat until the oil shimmers but does not smoke.
  5. Carefully place the pork chops in the skillet and fry for about 4-5 minutes per side, or until golden brown and cooked through. Use tongs to flip them gently.
  6. Remove the pork chops from the skillet and place them on a plate lined with paper towels to drain excess oil.
  7. In the same skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
  8. Add the butter to the skillet and melt it, then whisk in the flour to create a roux.
  9. Slowly stir in the milk, whisking continuously until the gravy thickens. Season with salt and pepper to taste, then stir in the crispy bacon.
  10. Pour the bacon gravy over the pork chops and serve immediately.
