  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (50 grams) packed brown sugar
  • ½ cup (115 grams) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup (120 grams) chopped walnuts, toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch (23×13 cm) loaf pan or line it with parchment paper.
  2. Toast the walnuts in a dry skillet over medium heat for about 4-5 minutes until fragrant and lightly golden. Set aside to cool.
  3. Mash the bananas in a large bowl using a fork or potato masher until mostly smooth with a few small lumps remaining.
  4. In a separate bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy, about 3 minutes with a mixer or 5 minutes by hand.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Stir the mashed bananas into the butter mixture until just blended.
  7. In another bowl, whisk together the flour, baking soda, and salt.
  8. Gradually fold the dry ingredients into the banana mixture until just combined, avoiding overmixing.
  9. Fold in the toasted walnuts, reserving a small handful to sprinkle on top.
  10. Pour the batter into the prepared loaf pan, smooth the top, and sprinkle the reserved walnuts over the surface.
  11. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  12. Let the bread cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter after adding dry ingredients to keep the bread tender. Use very ripe bananas for best flavor and moisture. Toast walnuts to enhance crunch and flavor. Tent with foil if browning too quickly. Letting batter rest 10 minutes before baking can intensify banana flavor.
