  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups (240g) powdered sugar
  • 23 tablespoons milk or cream
  • 1 teaspoon vanilla extract
  • Food coloring gels in pastel shades (pink, lavender, mint, yellow)
  • Conversation heart candies or edible markers (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9-inch round baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the softened butter with granulated sugar and light brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low until just incorporated.
  6. Pour the dough into the prepared pan and spread evenly with a spatula.
  7. Bake for 25-30 minutes, or until edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  8. Cool the cookie cake completely in the pan on a wire rack for at least 30 minutes.
  9. Prepare the icing by whisking powdered sugar with milk and vanilla extract until smooth and slightly thickened. Divide and tint with food coloring.
  10. Decorate the cooled cookie cake using piping bags or zip-top bags to pipe conversation heart shapes and messages. Optionally add conversation heart candies on top.
  11. Let the decorated cookie cake sit at room temperature for about 1 hour to let the icing firm up before slicing and serving.

Notes

Do not overbake; the cookie cake will continue cooking as it cools to achieve a chewy softness. Let the cake cool completely before icing to prevent melting. Use room temperature eggs and butter for smooth mixing. Adjust icing consistency by adding powdered sugar or milk as needed. Decorating bags can be chilled briefly to firm up icing for easier piping.
