These cozy cranberry crumble bars combine a tangy cranberry filling with a tender, buttery crumble topping, perfect for holiday gatherings and easy to make with simple pantry ingredients.

  • 2 cups (240 g) all-purpose flour
  • 1 cup (90 g) old-fashioned rolled oats
  • 1 cup (200 g) light brown sugar
  • 1 cup (226 g) unsalted butter, softened
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups (about 300 g) fresh or frozen cranberries
  • ¾ cup (150 g) granulated sugar
  • 1 teaspoon orange zest
  • 2 tablespoons fresh orange juice
  • 2 tablespoons cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking pan or line it with parchment paper with an overhang.
  2. In a large bowl, combine flour, rolled oats, light brown sugar, ground cinnamon, and salt. Mix evenly.
  3. Cut softened butter into small cubes and add to dry ingredients. Mix with an electric mixer or fingertips until mixture resembles coarse crumbs with pea-sized clumps.
  4. Reserve 1 ½ cups of crumble mixture for topping. Press the remaining crumble firmly into the bottom of the prepared pan to form an even layer.
  5. In a separate bowl, toss cranberries with granulated sugar, orange zest, fresh orange juice, and cornstarch until well coated.
  6. Spread the cranberry filling evenly over the pressed crust.
  7. Sprinkle the reserved crumble mixture evenly over the cranberry layer without pressing down.
  8. Bake for 40–45 minutes until topping is golden brown and filling is bubbly. Tent with foil halfway through if topping browns too quickly.
  9. Cool completely on a wire rack for at least 2 hours before slicing.
  10. Use parchment overhang to lift bars from pan and cut into 12 or 16 squares.

Notes

Press the crust firmly to prevent bars from crumbling. Use fresh orange zest and juice for brightness. Frozen cranberries can be used without thawing. Tent with foil if topping browns too quickly. Cool bars completely before slicing to avoid filling spill.
