  • 1 large butternut squash, peeled and cubed
  • 2 cups chicken or vegetable broth
  • 1 cup coconut milk (or heavy cream)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Salt to taste
  • Crusty bread for serving
  • 23 lbs pork loin roast
  • 3 apples, sliced
  • 1 cup apple cider
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • ½ tsp cloves
  • Salt and pepper to taste

Instructions

  1. For Hearty Beef Stew: Toss beef cubes with flour, salt, and pepper. Sear in a skillet until browned. Transfer to crock pot. Add carrots, potatoes, celery, onion, and garlic. Pour in beef broth and stir in thyme and rosemary. Cook on low for 7-8 hours. Adjust seasoning before serving.
  2. For Autumn Squash Soup: Place squash, onion, garlic, and broth in crock pot. Add cinnamon, nutmeg, and salt. Cook on low for 6-7 hours. Blend until smooth. Stir in coconut milk or cream and heat for 10 minutes. Serve hot with crusty bread.
  3. For Apple Cinnamon Pork Roast: Rub pork loin with salt, pepper, cinnamon, and cloves. Place apples in crock pot and lay pork on top. Sprinkle brown sugar over pork and pour in apple cider. Cook on low for 6-7 hours. Slice pork and serve with apples and pan juices.
