  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)
  • 1 cup shredded mozzarella or Gruyère cheese (optional)
  • Baguette slices or crusty bread, for serving

Instructions

  1. Thinly slice 3 large yellow onions, about 5 minutes.
  2. Optional: Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium heat. Add onions and a pinch of salt. Cook, stirring occasionally, for 15-20 minutes until golden brown and soft. Skip this step for a milder flavor.
  3. Season chicken breasts or thighs with salt and pepper on both sides.
  4. Layer half of the caramelized (or raw) onions in the bottom of the slow cooker. Place chicken on top, then cover with remaining onions and minced garlic.
  5. Pour 2 cups beef broth and 2 tablespoons Worcestershire sauce evenly over the chicken and onions. Sprinkle thyme on top.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and reaches 165°F internal temperature.
  7. Optional: About 15 minutes before serving, sprinkle shredded cheese over the chicken and onions. Cover and let cheese melt until bubbly.
  8. Serve chicken and onions with cooking juices spooned on top alongside toasted baguette slices or crusty bread.

Notes

Sautéing onions before slow cooking enhances flavor but can be skipped for a milder taste. Use chicken thighs for juicier meat. If sauce is too thin, remove chicken and reduce liquid on high with lid off before adding cheese. For dairy-free, substitute butter with coconut oil and omit cheese or use plant-based cheese.
