  • 8 oz (225 g) deli ham, chopped
  • 2 cups (200 g) sharp cheddar cheese, shredded
  • 4 large eggs, room temperature
  • 1 ½ cups (360 ml) whole milk
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp unsalted butter, melted
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 tsp fresh thyme, chopped (optional)
  • For the glaze:
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or nonstick spray.
  2. Slice croissants into roughly 1-inch pieces and place evenly in the baking dish.
  3. Scatter chopped ham evenly over the croissant pieces.
  4. Sprinkle shredded cheddar cheese over the ham and croissants.
  5. In a large bowl, whisk together eggs, whole milk, melted butter, salt, and pepper until smooth and slightly frothy.
  6. Pour the custard evenly over the croissant, ham, and cheese layers. Press down lightly to help soak the croissants.
  7. Let the bake sit for 10-15 minutes at room temperature to allow custard absorption.
  8. Mix Dijon mustard, honey, and heavy cream in a small bowl until smooth and glossy.
  9. Brush the glaze generously over the top of the croissant bake.
  10. Bake uncovered for 35-40 minutes or until custard is set and top is golden brown and slightly crisp.
  11. Remove from oven and let cool for 5-10 minutes before slicing and serving.

Notes

Use day-old croissants for best texture; fresh croissants require shorter soaking time to avoid sogginess. Let the bake rest before slicing for clean cuts. If top browns too fast, tent with foil after 25 minutes. Can be assembled the night before and refrigerated; add 10 minutes to baking time if chilled. Leftovers store well in fridge for 3 days and reheat in oven to preserve texture.
