  • 2 tablespoons bourbon
  • 1/3 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 6 tablespoons unsalted butter, cold and cut into small cubes
  • A pinch of salt
  • Optional: 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly butter your baking dish to prevent sticking.
  2. In a large bowl, toss the peeled and sliced peaches with granulated sugar, brown sugar, bourbon, lemon juice, cornstarch, and cinnamon. Mix gently until peaches are evenly coated. Set aside for 10 minutes to let the flavors meld.
  3. In a separate bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt. Add the cold, cubed butter. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized pieces.
  4. Pour the peach mixture evenly into the prepared baking dish. Sprinkle the cinnamon oat topping over the peaches, covering them completely but not pressing down.
  5. Bake for 40-45 minutes until the topping is golden brown and crisp, and the peach filling is bubbly around the edges. If the topping browns too quickly, tent it loosely with foil halfway through baking.
  6. Let the crisp rest for about 10 minutes before serving to thicken up.

Notes

Keep the butter cold for a crumbly topping. Peel peaches for smoother texture. If peaches are very juicy, add an extra tablespoon of cornstarch. Tent with foil if topping browns too fast. Can substitute almond flour for gluten-free and coconut sugar for brown sugar. Use frozen peaches if fresh are unavailable, thaw and drain excess liquid.
