  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

  • 1 cup (240ml) canned pumpkin puree (not pumpkin pie filling)
  • ⅔ cup (135g) brown sugar, packed (preferably dark)
  • ⅓ cup (80ml) vegetable oil or melted coconut oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (90g) pecans, toasted and roughly chopped
  • For the Brown Sugar Streusel Topping:
  • ⅓ cup (65g) brown sugar, packed
  • ¼ cup (30g) all-purpose flour
  • 3 tablespoons (42g) unsalted butter, cold and cubed
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease with cooking spray.
  2. Toast pecans in a dry skillet over medium heat for 3-4 minutes until fragrant and slightly darker. Remove and cool.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a medium bowl, whisk pumpkin puree, brown sugar, oil, eggs, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients and gently fold until just combined. Fold in toasted pecans.
  6. In a small bowl, combine brown sugar, flour, cinnamon, and cold butter. Use a fork or pastry cutter to create crumbly streusel. Stir in chopped pecans.
  7. Spoon batter into muffin cups about ¾ full. Sprinkle streusel topping generously over each muffin.
  8. Bake for 18-22 minutes or until a toothpick inserted comes out clean with a few moist crumbs.
  9. Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid dense muffins. Use room temperature eggs for better mixing. Toast pecans to enhance flavor. Keep butter cold for crumbly streusel. Tent muffins with foil if streusel browns too fast. Store in airtight container for 2-3 days or freeze for up to 3 months.
