  • 2 large boneless, skinless chicken breasts (about 1 pound / 450g)
  • 3 cloves garlic, minced
  • 3/4 cup grated parmesan cheese (about 75g)
  • 1 cup heavy cream (240ml)
  • 2 tablespoons unsalted butter (about 28g)
  • Salt and freshly ground black pepper, to taste
  • Optional: chopped parsley or thyme for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides lightly with salt and pepper. (5 minutes)
  2. Heat a large skillet over medium heat and add 1 tablespoon of butter. Let it melt and foam but not brown. (2 minutes)
  3. Add the chicken breasts and cook for about 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Avoid moving the chicken too much. Remove from pan and set aside. (12 minutes)
  4. Lower heat to medium-low, add remaining 1 tablespoon butter. Once melted, add minced garlic and sauté gently for 1-2 minutes until fragrant but not browned. (3 minutes)
  5. Pour in the heavy cream and bring to a gentle simmer. Gradually stir in the grated parmesan cheese until melted and smooth. Taste and adjust salt and pepper. (5 minutes)
  6. Nestle the cooked chicken breasts back into the creamy sauce. Spoon sauce over the top and let simmer together for 2-3 minutes to marry flavors. (3 minutes)
  7. Remove from heat and optionally sprinkle chopped parsley or cracked black pepper before serving.

Notes

If sauce is too thick, add a splash of chicken broth or milk to loosen. If too thin, simmer longer while stirring. Avoid crowding the pan when searing chicken to get a nice crust.
