  • 2 cups (200g) sharp cheddar cheese, shredded
  • 4 oz (115g) cream cheese, softened
  • 1 cup (240ml) medium-bodied lager or amber ale beer
  • 1 clove garlic, minced
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh chives or parsley, finely chopped (optional garnish)

Instructions

  1. Shred the cheddar cheese if not pre-shredded. Soften the cream cheese by leaving it out at room temperature for 20 minutes or microwaving briefly (about 10 seconds).
  2. In a medium saucepan over medium heat, pour 1 cup (240ml) of your chosen beer. Warm it gently until it’s hot but not boiling (about 3-4 minutes).
  3. Whisk in the softened cream cheese until fully melted and smooth.
  4. Gradually add the shredded cheddar cheese, stirring constantly. Allow each handful to melt before adding the next, about 5-7 minutes.
  5. Stir in the minced garlic, yellow mustard, Worcestershire sauce, onion powder, and smoked paprika if using. Season with salt and black pepper to taste.
  6. Reduce heat to low and let the dip simmer for 2-3 minutes, stirring occasionally. Add a splash more beer or milk if the dip is too thick.
  7. Remove from heat and transfer to a warm serving bowl. Garnish with fresh chives or parsley if desired.

Notes

Use a medium-bodied lager or amber ale for best flavor; avoid very bitter IPAs or very dark stouts unless you want a stronger taste. Warm the beer before adding cheese to prevent clumping. Stir constantly and add cheese gradually to keep the dip smooth. If dip thickens after sitting, stir in a splash of beer or milk before serving again. For gluten-free, use gluten-free pretzels. Pre-shredded cheese may affect meltiness due to anti-caking agents.
