  • 1 tbsp fresh dill, chopped (optional)
  • 1 tsp fresh lemon juice
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
  • 8 slices white sandwich bread, crusts removed

Instructions

  1. Shred or finely chop cooked chicken breast into bite-sized pieces (about 2 cups or 300g).
  2. Finely dice ½ cup (60g) celery and thinly slice 2 tablespoons of green onions. Chop 1 tablespoon of fresh dill if using.
  3. In a medium bowl, combine ½ cup (120ml) mayonnaise and 2 tablespoons (30g) softened cream cheese. Stir until smooth and well blended.
  4. Stir in 1 teaspoon Dijon mustard and 1 teaspoon fresh lemon juice.
  5. Gently fold in shredded chicken, diced celery, sliced green onions, and chopped dill. Season with salt and freshly ground black pepper to taste. Avoid overmixing.
  6. Lay out 8 slices of white sandwich bread and trim off the crusts carefully.
  7. Spread the creamy chicken salad evenly over 4 slices of bread. Top each with another slice to form sandwiches. Press down lightly.
  8. Wrap the sandwiches tightly in plastic wrap and refrigerate for at least 30 minutes to let flavors meld and make slicing easier.
  9. Remove crusts if not already done, then cut each sandwich into finger-sized rectangles or triangles. Arrange on a platter and serve.
