  • ½ cup (120 ml) heavy cream (or full-fat coconut cream for dairy-free)
  • ⅓ cup (65 grams) granulated sugar
  • 2 ½ teaspoons (7 grams) unflavored gelatin powder
  • ¼ cup (60 ml) cold water
  • Zest of 2 medium limes
  • 3 tablespoons (45 ml) fresh lime juice
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Toasted coconut flakes (optional, for garnish)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Bloom the gelatin: Sprinkle 2 ½ teaspoons (7 grams) of unflavored gelatin powder over ¼ cup (60 ml) cold water. Let it sit for 5-10 minutes until it swells and becomes jelly-like.
  2. Heat the coconut milk mixture: In a medium saucepan, combine 1 ½ cups (360 ml) full-fat coconut milk, ½ cup (120 ml) heavy cream, and ⅓ cup (65 grams) granulated sugar. Warm over medium heat, stirring frequently, until sugar dissolves and mixture is hot but not boiling (about 5 minutes).
  3. Add gelatin and flavorings: Remove the saucepan from heat. Whisk the bloomed gelatin into the warm coconut mixture until fully dissolved. Stir in the zest of 2 medium limes, 3 tablespoons (45 ml) fresh lime juice, 1 teaspoon vanilla extract, and a pinch of sea salt.
  4. Pour and chill: Divide the mixture evenly into 6 ramekins or serving glasses. Let them cool slightly at room temperature (10-15 minutes), then cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  5. Serve and garnish: Before serving, top with toasted coconut flakes and a small sprig of fresh mint. Optionally add a thin lime slice for extra color and zing.

Notes

Do not boil the coconut milk mixture to preserve gelatin setting power. Bloom gelatin properly before adding. Use full-fat coconut milk for best creaminess. Chill at least 4 hours or overnight for best texture. Toast coconut flakes for garnish to add crunch and aroma. For dairy-free, substitute heavy cream with coconut cream or almond milk. Agar-agar can be used as a vegetarian gelatin substitute but requires different handling.
