Ingredients

Scale
  • 1 pound (16 oz) potato gnocchi (shelf-stable or refrigerated)
  • 3 cups cooked chicken, shredded or cubed (rotisserie recommended)
  • 8 oz cream cheese, softened
  • 1 cup chicken broth (low sodium)
  • 1 cup shredded cheddar cheese
  • 1/2 cup whole milk or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 6 slices bacon, cooked crisp and crumbled
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried dill or ranch seasoning mix
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 1/2 cup extra shredded cheddar cheese (for topping)
  • 2 tablespoons fresh chives or green onions, chopped (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Cook bacon until crispy and crumble. Shred or cube chicken, grate cheeses, and chop herbs.
  2. In a medium bowl, whisk together softened cream cheese, chicken broth, milk, garlic, onion powder, dill/ranch seasoning, salt, and pepper until mostly smooth.
  3. In a large oven-safe skillet or casserole dish, add gnocchi, chicken, cheddar, and Parmesan. Pour creamy sauce over and stir gently to coat.
  4. Sprinkle crumbled bacon and extra cheddar cheese on top. Add chives or green onions if using.
  5. Bake uncovered for 25-30 minutes, until bubbly and golden brown around the edges. If the top browns too quickly, cover loosely with foil for the last 10 minutes.
  6. Let cool for 5 minutes before serving. The sauce will thicken as it cools. Garnish with additional chives or green onions if desired.

Notes

For a gluten-free version, use cauliflower or gluten-free gnocchi. You can substitute turkey bacon or use dairy-free cheese and milk alternatives. Add extra veggies like spinach or peas for more nutrition. Let the bake rest before serving so the sauce thickens. Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
