  • ½ teaspoon salt, or to taste
  • Freshly ground black pepper, to taste
  • ¼ teaspoon garlic powder (optional)
  • 1 tablespoon fresh parsley or chives, chopped (optional)

Instructions

  1. Prep your ingredients: If using fresh corn, cut kernels off the cobs (about 4 cups). Let cream cheese sit at room temperature for 10 minutes to soften. If using frozen corn, thaw and drain any excess water.
  2. Melt butter in a medium saucepan over medium heat, swirling gently to avoid browning, about 2 minutes.
  3. Add corn kernels and stir to coat with butter. Cook for 4-5 minutes until heated through and tender.
  4. Season corn with sugar, salt, garlic powder (if using), and black pepper. Stir well and taste to adjust seasoning.
  5. Lower heat to medium-low. Add softened cream cheese in small chunks, stirring gently to melt into the corn.
  6. Pour in heavy cream or half-and-half and stir continuously until smooth and creamy, about 3-4 minutes.
  7. Simmer gently on low heat for 5 minutes, stirring occasionally, until mixture thickens slightly. Add more cream or milk if too thick.
  8. Taste and adjust seasoning if needed.
  9. Remove from heat, garnish with chopped parsley or chives, and serve warm.
