  • A handful fresh basil leaves, chopped

Instructions

  1. Pat dry chicken breasts and season both sides with salt and freshly ground black pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 3-4 minutes per side until golden brown but not cooked through.
  3. Transfer seared chicken breasts to the slow cooker base.
  4. In the same skillet, reduce heat to medium and sauté minced garlic for about 30 seconds until fragrant.
  5. Add chopped sun-dried tomatoes and stir for 1 minute.
  6. Pour in chicken broth, scraping the skillet bottom to loosen browned bits.
  7. Stir in heavy cream, grated Parmesan cheese, dried Italian herbs, and red pepper flakes (if using).
  8. Simmer sauce gently for 3-4 minutes until cheese melts and sauce thickens slightly.
  9. Ladle sauce over chicken breasts in the slow cooker, ensuring they are well covered.
  10. Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is fork-tender and sauce thickens.
  11. About 10 minutes before serving, stir in chopped fresh basil leaves.
  12. Taste and adjust seasoning with salt and pepper if needed. Serve warm over pasta, rice, or steamed vegetables.
