  • 4 boneless, skinless chicken breasts (medium-sized)
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced or finely chopped
  • ½ cup sun-dried tomatoes packed in oil, chopped
  • 1 cup chicken broth (240 ml)
  • 1 cup heavy cream (240 ml)
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley or basil, finely chopped for garnish

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat. Brown chicken breasts about 3 minutes per side until golden but not cooked through. Transfer to slow cooker.
  3. In the same skillet, sauté garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
  4. Add chicken broth to skillet, scraping browned bits from bottom. Stir in heavy cream, Parmesan cheese, and red pepper flakes if using. Cook 3-5 minutes until cheese melts and sauce thickens slightly.
  5. Pour sauce over chicken in slow cooker. Cover and cook on low for 3-4 hours or high for 2-3 hours until chicken reaches 165°F (74°C) and is tender.
  6. Before serving, stir sauce gently and garnish with fresh parsley or basil.

Notes

Browning the chicken before slow cooking adds depth of flavor. If sauce is too thin, remove chicken and reduce sauce on high with lid off for 15-20 minutes or thicken with cornstarch slurry. Use freshly grated Parmesan for best flavor. Can substitute half-and-half for heavy cream for lighter sauce or coconut cream for dairy-free version.
