A simple, comforting slow cooker recipe using just five ingredients to create a creamy, cheesy, and smoky chicken dish perfect for busy weeknights.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 packet (about 1 oz) ranch seasoning
  • 8 oz softened cream cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup cooked and crumbled bacon bits

Instructions

  1. Place 2 lbs of boneless, skinless chicken breasts into the bottom of your slow cooker, spreading them out evenly.
  2. Sprinkle one packet (~1 oz) of ranch seasoning evenly over the chicken breasts.
  3. Cut 8 oz of softened cream cheese into cubes and scatter them over the chicken.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender and easy to shred.
  5. Using two forks, shred the chicken right in the crockpot and stir to combine with the cream cheese and ranch seasoning.
  6. Sprinkle 1 cup shredded sharp cheddar and ½ cup cooked bacon bits over the shredded chicken and stir gently.
  7. Cover and cook for another 15-20 minutes to melt the cheese and meld flavors.
  8. Serve hot over rice, toast, or as a dip.

Notes

Softening cream cheese before adding helps it blend smoothly. Add cheese and bacon near the end to keep bacon crispy. If sauce is too thick, stir in a splash of milk or chicken broth. Adjust salt and pepper to taste depending on bacon saltiness.
