  • 6 large eggs, hard-boiled, peeled, and cooled
  • 3 tablespoons mayonnaise
  • 1 tablespoon sour cream (or Greek yogurt for a lighter option)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 teaspoons everything bagel seasoning (sesame seeds, poppy seeds, dried garlic, onion flakes, salt)
  • Optional garnish: chopped fresh chives or parsley

Instructions

  1. Place 6 large eggs in a medium pot and cover with cold water about 1 inch above the eggs (approximately 3 cups/720 ml). Bring to a rolling boil over medium-high heat, then cover the pot, turn off the heat, and let sit for 10 minutes.
  2. Transfer the eggs immediately to a bowl of ice water. Let chill for at least 5 minutes to stop cooking. Gently tap and peel the eggs under cold running water.
  3. Slice each egg in half lengthwise. Carefully scoop out the yolks into a bowl. Mash the yolks with a fork until crumbly and smooth.
  4. Add mayonnaise, sour cream, Dijon mustard, white vinegar, salt, and black pepper to the mashed yolks. Stir until creamy and fully combined. Taste and adjust seasoning as needed.
  5. Fill each egg white half evenly with the creamy yolk mixture using a spoon, butter knife, or piping bag.
  6. Generously top each filled egg with about ⅓ teaspoon of everything bagel seasoning.
  7. Optionally, sprinkle chopped fresh chives or parsley over the eggs. Cover and refrigerate for at least 30 minutes before serving.

Notes

Use eggs about a week old for easier peeling. Shock eggs in ice water immediately after boiling to loosen shells. Add seasoning just before serving to keep crunch. Filling can be loosened with a splash of milk or more sour cream if too thick. Store covered in fridge and consume within 2 days. Variations include adding sriracha for spice, herbs for freshness, or swapping mayo and sour cream with avocado or Greek yogurt.
