  • 1 teaspoon vanilla extract
  • 1 cup homemade granola
  • For the granola:
  • 1 ½ cups old-fashioned rolled oats
  • ½ cup chopped nuts (almonds or walnuts)
  • ¼ cup unsweetened shredded coconut (optional)
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons coconut or olive oil
  • ½ teaspoon cinnamon
  • Pinch of sea salt
  • 1 ½ cups fresh berries (strawberries, blueberries, raspberries; fresh or thawed frozen)
  • Optional toppings: chia seeds, sliced bananas, dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine 1 ½ cups rolled oats, ½ cup chopped nuts, ¼ cup shredded coconut, ½ teaspoon cinnamon, and a pinch of sea salt.
  3. In a small bowl, whisk together 3 tablespoons honey or maple syrup and 2 tablespoons coconut or olive oil until well combined.
  4. Pour the wet mixture over the dry ingredients and stir well to coat everything evenly.
  5. Spread the granola mixture evenly on the prepared baking sheet. Bake for 15-20 minutes, stirring halfway through.
  6. Remove from oven and let cool completely to crisp up.
  7. In a medium bowl, mix 2 cups Greek yogurt with 2 tablespoons honey and 1 teaspoon vanilla extract until smooth and creamy.
  8. In serving glasses, layer Greek yogurt, fresh berries, and homemade granola.
  9. Repeat layers until glasses are filled, finishing with berries and granola on top.
  10. Serve immediately for best crunch or refrigerate up to 2 hours before serving.

Notes

Toast granola evenly by stirring halfway through baking. Let granola cool completely to crisp up before layering. Use thick Greek yogurt to prevent runniness. Use ripe, firm berries for best texture. Granola can be made ahead and stored in an airtight container for up to two weeks. Assemble parfaits just before serving to keep granola crunchy.
