  • 4 ripe but firm peaches, halved and pitted
  • 1 cup (240 ml) mascarpone cheese, chilled
  • 2 tablespoons honey, plus extra for drizzling
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • 1 tablespoon olive oil
  • A pinch of ground cinnamon (optional)
  • Fresh mint leaves for garnish

Instructions

  1. Rinse and dry 4 ripe peaches. Slice each peach in half and carefully remove the pit. Brush the cut sides lightly with 1 tablespoon of olive oil.
  2. Preheat your grill or grill pan to medium-high heat (around 375°F/190°C). If using charcoal, let the coals burn down to a steady heat.
  3. Place the peaches cut side down on the grill. Cook for about 3-4 minutes until grill marks appear and the peaches start to soften.
  4. Flip and grill the skin side for another 2 minutes until peaches are juicy and tender but still hold their shape.
  5. While the peaches grill, whisk together mascarpone cheese, honey, fresh lemon juice, and vanilla extract until smooth and slightly fluffy.
  6. Arrange the grilled peaches on serving plates, cut side up. Spoon dollops of the honey mascarpone over each half.
  7. Drizzle with extra honey and sprinkle a pinch of ground cinnamon if desired. Garnish with fresh mint leaves.

Choose peaches that are ripe but firm to avoid mushy grilled fruit. Brush peaches with olive oil to prevent sticking and promote caramelization.
