Creamy Iced Lavender Honey Latte Recipe with Oat Milk

A refreshing and creamy iced latte combining floral lavender, natural honey sweetness, and smooth oat milk, perfect for warm weather and a calming pick-me-up.

  • 1 tablespoon dried culinary lavender buds (organic or food-grade)
  • 1 cup (240 ml) hot water for steeping lavender
  • 1 to 2 tablespoons honey (local wildflower honey preferred)
  • 1 shot (1 ounce or 30 ml) freshly brewed espresso or strong coffee
  • 1 cup (240 ml) chilled oat milk (barista-style preferred)
  • Ice cubes (about 1 cup or 240 ml to fill glass)
  • Optional garnish: small sprig of lavender or drizzle of honey

Instructions

  1. Bring 1 cup (240 ml) of water to a boil. Place 1 tablespoon of dried culinary lavender into a heatproof container or tea infuser.
  2. Pour the hot water over the lavender and steep for 5 minutes until fragrant and pale purple.
  3. Strain out the lavender buds using a fine mesh strainer or remove the tea infuser. Keep the lavender tea warm.
  4. Stir in 1 to 2 tablespoons of honey into the warm lavender tea until fully dissolved. Adjust sweetness to taste.
  5. Prepare 1 shot (1 oz or 30 ml) of espresso or 1/4 cup (60 ml) of very strong coffee, hot and fresh.
  6. Fill a serving glass with about 1 cup (240 ml) of ice cubes.
  7. Pour the honey-lavender infusion over the ice, then add the espresso or coffee shot.
  8. Slowly pour 1 cup (240 ml) of chilled oat milk over the drink to create a layered effect. Stir gently if desired.
  9. Optionally garnish with a small lavender sprig or a drizzle of honey. Serve immediately and enjoy.

Notes

Steep lavender for no more than 5 minutes to avoid bitterness. Use culinary-grade dried lavender. Stir honey into warm lavender tea for best dissolution. Keep oat milk chilled for creamy texture. Freshly brewed coffee enhances flavor. Store leftover lavender honey infusion in the fridge up to 3 days. Assemble latte fresh for best taste. Optional variations include using maple syrup instead of honey, almond or coconut milk instead of oat milk, or serving warm in cooler months.
