  • 8 ounces cream cheese, softened (full-fat preferred)
  • ½ cup sour cream (plain Greek yogurt can substitute)
  • 1 cup shredded cheddar cheese
  • ½ cup chicken broth (low sodium preferred)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons fresh chives, finely chopped
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Cook the bacon in a skillet over medium heat until crisp, about 6-8 minutes. Remove and drain on paper towels, then crumble once cooled. Save 1 tablespoon of bacon fat in the pan.
  2. Season chicken with garlic powder, onion powder, salt (about 1 teaspoon), and pepper (about ½ teaspoon).
  3. Heat 1 tablespoon of reserved bacon fat or olive oil in the skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden but not fully cooked. Remove and set aside.
  4. In a mixing bowl, whisk together softened cream cheese and sour cream until smooth. Pour into skillet and warm gently over medium-low heat.
  5. Add chicken broth to thin the sauce slightly, then stir in shredded cheddar cheese until melted and silky. Add more broth if sauce is too thick.
  6. Nestle chicken back into skillet, spoon sauce over each piece, cover, and simmer for 10-12 minutes until chicken reaches 165°F (74°C).
  7. Sprinkle crumbled bacon and chopped chives over the top just before serving. Stir gently to combine.
  8. Serve hot with your favorite low-carb sides.

Let cream cheese soften at room temperature for at least 30 minutes before mixing to avoid lumps. Save bacon fat for extra flavor when searing chicken. Avoid overcooking chicken to keep it juicy. If sauce thickens too much, add a splash of broth. Let chicken rest a few minutes off heat before serving. For dairy-free, substitute cream cheese and sour cream with coconut or cashew cream alternatives.
