Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until crumbs are evenly coated and resemble wet sand.
  2. Press the crumb mixture firmly into the bottom of a 9×9 inch baking dish to form an even layer. Bake for 8-10 minutes until golden and fragrant. Let cool completely.
  3. In a large chilled bowl, pour cold heavy cream and add powdered sugar. Using an electric mixer, whip on medium-high speed until soft peaks form (about 3-4 minutes). Set aside.
  4. In another bowl, beat softened cream cheese until smooth. Add fresh lemon juice and lemon zest, mixing until fully combined with no lumps.
  5. Fold one-third of the whipped cream into the lemon cream mixture to lighten it, then gently fold in the remaining whipped cream until fully incorporated.
  6. Spoon half of the lemon mousse mixture over the cooled crust, smoothing it out. Add the second mousse layer on top, creating a thick, velvety topping. Optionally, add a layer of lemon curd in the middle.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  8. Before serving, top with whipped cream and garnish with lemon slices or candied peel.
