A quick and easy creamy chicken dip with cream cheese, Parmesan, sun-dried tomatoes, and fresh herbs, served with toasted baguette slices. Perfect for gatherings and late-night snacks.

  • 2 cups (280g) shredded cooked chicken (rotisserie, roasted, or poached)
  • 8 oz (225g) cream cheese, softened (preferably full-fat Philadelphia)
  • 1/4 cup (60ml) mayonnaise (can substitute Greek yogurt for lighter version)
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/3 cup (50g) sun-dried tomatoes, chopped and drained (packed in oil)
  • 2 cloves garlic, minced
  • 2 tbsp fresh basil, chopped (or parsley/oregano)
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 baguette (about 12 inches / 30cm), sliced and toasted

Instructions

  1. Preheat oven to 375°F (190°C) for toasting the baguette.
  2. Slice the baguette into 1/2-inch (1.3 cm) diagonal pieces. Arrange on a baking sheet and toast for 8-10 minutes, flipping halfway, until golden and crisp. Set aside to cool.
  3. In a medium mixing bowl, beat together softened cream cheese and mayonnaise until smooth and creamy, about 2-3 minutes with a hand mixer.
  4. Fold in grated Parmesan, minced garlic, chopped sun-dried tomatoes, and chopped fresh basil. Stir gently to combine.
  5. Gently fold in shredded cooked chicken until evenly distributed.
  6. Add red pepper flakes, salt, and freshly ground black pepper to taste. Stir to blend all flavors.
  7. Cover bowl with plastic wrap and refrigerate for at least 15 minutes to allow flavors to meld.
  8. Spoon dip into a serving bowl and serve alongside toasted baguette slices. Garnish with fresh basil leaves if desired.
  9. Optional: For a warm dip, transfer mixture to an oven-safe dish and bake at 350°F (175°C) for 15 minutes until bubbly and slightly golden on top.

Notes

Use fully softened cream cheese for smooth texture. Resting dip in fridge for at least 15 minutes improves flavor melding. Day-old baguette slices toast best for crispness. For dairy-free, use almond-based cream cheese and vegan mayo but dip will be less rich. Gluten-free version can be served with gluten-free crackers or veggies. Optional warm serving by baking dip at 350°F for 15 minutes.
