  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth (low-sodium)
  • 3/4 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/4 cup Parmesan cheese, grated
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. Place chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet, gently pound them to about 1/2-inch thickness for even cooking. Season both sides generously with salt and black pepper.
  2. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Once hot, add chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through (internal temperature 165°F). Remove chicken and set aside on a warm plate.
  3. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Stir often for 1-2 minutes until fragrant but not burned.
  4. Pour in 1 cup chicken broth, scraping up any browned bits from the pan. Let simmer for 3-4 minutes to reduce slightly.
  5. Lower heat to medium-low. Whisk in 3/4 cup heavy cream and 4 oz softened cream cheese in small chunks. Stir gently until cream cheese melts completely and sauce is smooth.
  6. Stir in 1/4 cup grated Parmesan, 1 teaspoon dried Italian herbs, and optional 1/4 teaspoon red pepper flakes. Taste and adjust salt and pepper. Sauce should be thick but pourable.
  7. Nestle chicken breasts back into the sauce. Spoon sauce over the top. Simmer gently for 3-5 minutes to let flavors marry and chicken warm through.
  8. Just before serving, sprinkle chopped fresh basil over the dish for a burst of color and fresh aroma.

Notes

If sauce is too thick, add a splash of chicken broth or cream to loosen. If too thin, simmer longer uncovered. Use room temperature cream cheese and heavy cream for smooth sauce. Avoid burning garlic to prevent bitterness. Fresh basil added at the end keeps flavor bright.
