  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • Salt and pepper, to season
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes packed in oil (drain but keep a bit of oil for cooking)
  • 1 cup low-sodium chicken broth (240 ml)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 3 cups fresh spinach, roughly chopped (about 90 g)
  • Fresh basil, chopped (optional, for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside.
  3. Reduce heat to medium. Add butter and minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Stir in chopped sun-dried tomatoes and cook for 2 minutes to release flavor.
  5. Pour in chicken broth, scraping the pan to lift browned bits. Simmer for 3-4 minutes until slightly reduced.
  6. Lower heat to medium-low and stir in heavy cream, Parmesan cheese, Italian seasoning, and crushed red pepper flakes. Cook for 4-5 minutes until sauce thickens slightly. Adjust seasoning with salt and pepper as needed.
  7. Add chopped spinach and stir until wilted and bright green, about 2 minutes.
  8. Return chicken breasts to the skillet, spoon sauce over them, cover loosely, and heat through for 2-3 minutes.
  9. Remove from heat, garnish with fresh basil if desired, and serve immediately over pasta, rice, or mashed potatoes.

Notes

If the sauce becomes too thick, add a splash of chicken broth or cream to loosen it. Use fresh Parmesan for best flavor and meltability. Avoid overcrowding the pan when searing chicken to ensure a good crust. Add spinach last to keep it vibrant and fresh.
