  • 2 tbsp unsalted butter

  • 1 medium yellow onion, finely chopped
  • 8 oz cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 1 tsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Slice 1 lb beef sirloin into thin strips about ¼ inch thick. Chop 1 medium onion finely, slice 8 oz mushrooms, and mince 3 garlic cloves. Set aside.
  2. Heat 1 tbsp olive oil in a large skillet or Dutch oven over medium-high heat. Add beef strips in a single layer and sear until browned but not fully cooked, about 2 minutes per side. Remove beef to a plate and set aside.
  3. Reduce heat to medium and add 2 tbsp unsalted butter. Once melted, add onions and cook until softened and translucent, about 4-5 minutes. Add mushrooms and cook until browned and moisture evaporates, about 6-7 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle 2 tbsp all-purpose flour over the onion-mushroom mixture and stir constantly for 1-2 minutes to cook out raw flour taste. Slowly pour in 2 cups beef broth while stirring to avoid lumps. Bring to a simmer; sauce will start to thicken.
  5. Stir in 8 oz egg noodles, 1 tbsp Worcestershire sauce, and 1 tsp Dijon mustard. Return beef strips to the pot, nestling them into the sauce. Cover and simmer gently for 12-15 minutes, stirring occasionally, until noodles are tender and beef is cooked through.
  6. Remove pot from heat and stir in 1 cup sour cream until smooth and creamy. Season with salt and pepper to taste. Avoid boiling after adding sour cream to prevent curdling.
  7. Sprinkle chopped fresh parsley over the stroganoff before serving.
