A quick and easy one-pot chicken Alfredo pasta recipe that combines tender chicken, perfectly cooked pasta, and a rich, creamy sauce for a comforting meal with minimal cleanup.

  • 2 medium boneless, skinless chicken breasts, sliced into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 3 cups chicken broth (preferably low sodium)
  • 1 cup heavy cream
  • 8 ounces uncooked fettuccine pasta, broken in half
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and freshly cracked black pepper, to taste
  • Pinch of nutmeg (optional)
  • Chopped fresh parsley, for garnish

Instructions

  1. Pat dry the chicken pieces. Heat olive oil over medium-high heat in a large skillet or Dutch oven. Add chicken and sauté for 5-6 minutes until golden but not fully cooked. Remove and set aside.
  2. Lower heat to medium, add more oil or butter if needed, and sauté minced garlic for about 30 seconds until fragrant.
  3. Pour in chicken broth and heavy cream, stir to combine. Add salt, pepper, and nutmeg. Bring to a gentle boil.
  4. Add broken fettuccine pasta, spreading evenly in the liquid. Stir frequently to prevent sticking.
  5. Reduce heat to medium-low, cover with lid slightly ajar, and cook pasta for about 15 minutes, stirring every 3-4 minutes until pasta is tender with a slight bite.
  6. Return chicken to the pot, stir and cook for another 4-5 minutes until chicken is cooked through and sauce thickens.
  7. Stir in butter and freshly grated Parmesan cheese until melted and creamy.
  8. Adjust seasoning with salt and pepper if needed. Garnish with chopped parsley and serve immediately.

Notes

Stir frequently during pasta cooking to prevent sticking. Use freshly grated Parmesan for best sauce texture. If sauce is too thick, add a splash of broth or cream; if too thin, simmer uncovered to reduce. Partial cooking of chicken before adding pasta keeps it juicy. For dairy-free, substitute heavy cream with coconut or cashew cream and use dairy-free cheese alternatives. Protein and vegetable swaps are easy to customize.
