  • 2 pounds Yukon Gold potatoes, peeled and thinly sliced (about 1/8 inch thick)
  • 8 oz Gruyère cheese, shredded
  • 2 cups heavy cream
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, finely chopped (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C). Butter a 9×13-inch baking dish thoroughly.
  2. Peel and slice the Yukon Gold potatoes into thin, even slices approximately 1/8 inch thick.
  3. In a medium saucepan, combine heavy cream, minced garlic, and chopped fresh thyme. Warm gently over medium-low heat until just about to simmer, do not boil. Remove from heat.
  4. Stir the flour into the warm cream mixture until smooth to thicken the sauce.
  5. Arrange half of the sliced potatoes in an even layer in the prepared baking dish. Season lightly with salt and pepper.
  6. Sprinkle half of the shredded Gruyère evenly over the potatoes, then pour half of the cream mixture on top.
  7. Repeat layers with remaining potatoes, season again, sprinkle with remaining cheese, and pour over the rest of the cream mixture.
  8. Cover the dish with aluminum foil and bake for 45 minutes.
  9. Remove the foil and bake an additional 20-25 minutes until the top is golden and bubbly.
  10. Let the dish rest for 10 minutes before serving to allow the sauce to thicken and slices to set.

Notes

If the top browns too quickly, loosely cover with foil again to prevent burning. Let the dish rest before serving to help the sauce thicken and slices hold together. Freshly shredded Gruyère melts better than pre-shredded cheese. For gluten-free, substitute flour with cornstarch. Variations include adding ham, caramelized onions, or using cauliflower for a low-carb option.
