A quick and easy no-bake cheesecake with a creamy, minty flavor reminiscent of a classic Shamrock Shake. Perfect for festive occasions or anytime you want a refreshing, indulgent dessert.

  • 24 Oreo cookies, crushed (or substitute with chocolate graham crackers)
  • 5 tablespoons unsalted butter, melted
  • 16 ounces (450g) cream cheese, softened
  • 1 cup (240ml) heavy whipping cream or whipped topping
  • 3/4 cup (90g) powdered sugar, sifted
  • 1 teaspoon peppermint extract
  • Few drops of green food coloring (optional)
  • 1/2 teaspoon vanilla extract
  • Mini chocolate chips or shaved dark chocolate (optional garnish)
  • Fresh mint leaves (optional garnish)
  • Whipped cream dollops (optional garnish)

Instructions

  1. Crush 24 Oreo cookies finely using a food processor or by placing them in a ziplock bag and smashing with a rolling pin.
  2. Transfer the crumbs to a bowl and stir in 5 tablespoons of melted unsalted butter until the mixture resembles wet sand.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan, creating an even layer. Refrigerate for about 10 minutes to set.
  4. In a large bowl, beat 16 ounces of softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  5. Gradually add 3/4 cup powdered sugar, 1 teaspoon peppermint extract, 1/2 teaspoon vanilla extract, and a few drops of green food coloring to the cream cheese. Beat until fully incorporated and uniform in color.
  6. In a separate bowl, whip 1 cup of heavy cream until stiff peaks form (or use whipped topping).
  7. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula, keeping the filling light and airy.
  8. Pour the filling over the chilled Oreo crust, smoothing the top with a spatula.
  9. Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours, preferably overnight, to set.
  10. Before serving, garnish with mini chocolate chips, whipped cream, or fresh mint leaves as desired.

Notes

Use softened cream cheese for smooth blending. Fold whipped cream gently to keep filling light. Chill at least 4 hours for best texture. For dairy-free, use vegan cream cheese and coconut whipped topping; for gluten-free, substitute crust with almond flour and cocoa powder mixture.
