  • 24 ladyfinger biscuits (savoiardi)
  • 8 ounces (227 g) mascarpone cheese, room temperature
  • 1 cup (240 ml) heavy whipping cream, cold
  • ½ cup (100 g) granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 4 ounces (113 g) cream cheese, softened (optional)
  • Unsweetened cocoa powder, for dusting
  • 2 tablespoons (30 ml) Marsala wine or coffee liqueur (optional)

Instructions

  1. Brew 1 cup (240 ml) espresso or strong coffee and let it cool to room temperature. Stir in Marsala wine or coffee liqueur and 2 tablespoons (25 g) sugar if using. Set aside.
  2. In a large bowl, combine mascarpone cheese and softened cream cheese. Beat gently with an electric mixer until smooth, about 2 minutes. Add ½ cup (100 g) sugar and vanilla extract, mixing until combined.
  3. In a separate chilled bowl, whip cold heavy cream to soft peaks, about 3-5 minutes on medium-high speed.
  4. Gently fold whipped cream into the mascarpone mixture to create a light, creamy filling.
  5. Quickly dip each ladyfinger biscuit into the cooled espresso for 1-2 seconds per side. Arrange about 12 dipped ladyfingers in a single layer in a 9×9-inch (23×23 cm) dish.
  6. Spread half of the mascarpone cream mixture evenly over the soaked ladyfingers.
  7. Repeat dipping and layering with the remaining ladyfingers, then spread the remaining cream mixture on top.
  8. Cover the dish with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
  9. Before serving, sift a generous layer of unsweetened cocoa powder over the top.

Use cooled espresso to avoid soggy cookies. Dip ladyfingers quickly (1-2 seconds per side) to keep them tender but intact. Whip cream to soft peaks and fold gently to maintain airy texture.
