Creamy Tuscan Chicken Recipe Easy Homemade with Sun-Dried Tomatoes

A rich and flavorful Italian-inspired chicken dish featuring tender chicken breasts simmered in a creamy garlic sauce with sun-dried tomatoes and spinach. Perfect for a quick, comforting weeknight dinner.

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • ½ cup (about 75 grams) sun-dried tomatoes, chopped (oil-packed recommended)
  • 2 cups (about 60 grams) baby spinach
  • 1 cup (240 ml) heavy cream
  • ½ cup (120 ml) low-sodium chicken broth
  • ½ cup (50 grams) grated Parmesan cheese
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Pat dry chicken breasts and season both sides with salt, pepper, and Italian seasoning. Let rest at room temperature for about 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and sear without moving for 4-5 minutes until golden brown on one side.
  3. Flip chicken and cook another 4 minutes until golden and nearly cooked through. Remove chicken from pan and set aside.
  4. Lower heat to medium and add butter to the skillet. Once melted, sauté minced garlic for about 1 minute until fragrant.
  5. Add chopped sun-dried tomatoes and cook for 2 minutes to release flavor.
  6. Pour in chicken broth and heavy cream, scraping up browned bits from the pan. Bring to a gentle simmer, then reduce heat to low and let thicken for 3-4 minutes.
  7. Stir in grated Parmesan cheese until melted and sauce is creamy. Add baby spinach and red pepper flakes (if using). Cook for 2 minutes until spinach wilts.
  8. Return chicken breasts to the pan, nestle into the sauce, and simmer on low for 5 minutes until chicken is cooked through (internal temperature 165°F / 74°C).
  9. Taste sauce and adjust salt and pepper as needed. Remove from heat and let rest for 2 minutes before serving.

Notes

Use low heat when simmering cream to prevent curdling. Let chicken rest before serving to keep it juicy. If sauce is too thin, add more Parmesan or simmer longer. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast or vegan cheese.
