  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 4 cups fresh spinach, packed (about 4 oz)
  • 1/3 cup sun-dried tomatoes, chopped, packed in oil
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup low sodium chicken broth
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and dried Italian herbs. (5 minutes)
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook undisturbed for 5-6 minutes until golden brown. Flip and cook another 5 minutes until chicken is firm but slightly springy. Remove chicken and set aside, tented with foil. (10-12 minutes)
  3. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Stir often and cook until fragrant and softened, about 1-2 minutes. (2 minutes)
  4. Pour in 1/2 cup chicken broth to deglaze the pan, scraping browned bits from the bottom. Let simmer and reduce slightly for 2 minutes. (2-3 minutes)
  5. Reduce heat to low. Stir in 1 cup heavy cream and 1/2 cup grated Parmesan cheese. Stir gently until cheese melts and sauce thickens slightly, about 3-5 minutes. (5 minutes)
  6. Add fresh spinach in batches, stirring until wilted but still bright green, about 2-3 minutes. (3 minutes)
  7. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over the top. Cover and let cook on low heat for 5 minutes to finish cooking and meld flavors. (5 minutes)
  8. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes. Serve immediately with extra sauce spooned over the chicken.

Notes

If sauce gets too thick, stir in a tablespoon of broth or cream to loosen before serving. Avoid overcooking chicken during searing to keep it juicy. Use room temperature chicken for even cooking. Deglaze pan to add depth of flavor. Fresh garlic preferred over pre-minced. For dairy-free, substitute coconut cream for heavy cream and nutritional yeast for Parmesan. Use gluten-free broth to keep recipe gluten-free.
