  • 4 ounces (115 grams) cream cheese, softened (or full-fat Greek yogurt for lighter option)
  • 2 tablespoons honey (mild, runny like clover or wildflower)
  • 1/4 cup (30 grams) shelled and toasted pistachios
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh lemon juice
  • 1 small clove garlic, minced (optional)
  • 1 teaspoon fresh herbs like thyme or oregano, finely chopped (optional)
  • Freshly cracked black pepper, to taste
  • Pinch of salt (optional, be cautious due to feta saltiness)

Instructions

  1. Toast the pistachios in a dry skillet over medium heat, stirring frequently, until fragrant and lightly browned (about 3-4 minutes). Transfer to a plate and let cool.
  2. In a food processor, combine crumbled feta and softened cream cheese. Pulse a few times to start breaking it down.
  3. Add minced garlic, lemon juice, and extra virgin olive oil to the processor. Pulse again until well combined.
  4. Turn the processor on and blend until the mixture is creamy and fluffy, about 2-3 minutes. Stop occasionally to scrape down the sides with a spatula to ensure even blending.
  5. Taste the dip and add freshly cracked black pepper and a pinch of salt if needed. Pulse briefly to mix.
  6. Roughly chop the cooled pistachios. Remove the whipped feta from the processor into a bowl and gently fold in the pistachios and fresh herbs if using.
  7. Transfer the dip to a serving dish. Drizzle generously with honey on top and add a few whole pistachios for presentation.

Notes

Use a high-quality, creamy feta (preferably sheep’s milk) for best texture. Soften cream cheese to room temperature before blending. Toast pistachios to enhance flavor and crunch. Chill dip for a few hours to meld flavors, then bring to room temperature before serving. Can substitute cream cheese with Greek yogurt or coconut yogurt for dairy-free option. Pistachios can be replaced with toasted almonds or walnuts. Avoid overwhipping to keep dip light and fluffy.
